Intimately designed, this evening will feel as if you have stepped into the welcoming home of the Executive Chef to share in this culinary experience. Guests will be charmed by the expertise of Chef James Rogers as he offers interesting details of his personal history, his passion for Spanish cuisine, and the inspiration behind the menu he prepared for this special evening.
Executive Chef James Rogers joined Acqualina in 2010 after eight years of perfecting his culinary artistry. He has had the pleasure of working with Miami’s very own renowned Chef Douglas Rodriguez of Ola Restaurant and Godfather of Nuevo Latino cuisine. He then moved on to work at the Delano Hotel as well as Casa de Campo Resort in the Dominican Republic and most recently, the Four Seasons Resort in Costa Rica.

Cabrales Cheese, Frisse, Dates wrapped in Smoked Bacon with Sherry Vinaigrette
Course Two
Grouper “a la plancha” with Calamari Escabeche, Squid Ink Espuma with Smoked Paprika Oil
Course Three
Rioja Braised Short Rib Crepenette with Picada, Black Olives, Capers and Piquillo Peppers and
Garbanzo Puree
Course Four
Crema Catalana, a rich custard flavored with brandy and topped with a caramelized sugar crust.
