As part of Seminole Hard Rock Hotel & Casino Hollywood’s festivities celebrating Cinco de Mayo and race week in South Florida, Abiaka Wood Fire Grill is collaborating with award-winning chef and TV personality, Aarón Sánchez, for Abiaka x Aarón Sánchez: Celebrating the Flavors of Mexico, taking place from Thursday, May 2 through Sunday, May 5. This four-night pop-up designed exclusively for race week brings a sexy new look and menu to the resort. Aarón and the team from his signature restaurant Johnny Sánchez, have created a menu that celebrates the rich flavors of Mexico, using the best local ingredients and highlights Aarón’s love for Gulf Coast seafood.

The Abiaka x Aarón Sánchez collab promises to bring an extraordinary dining experience unlike anything else in the area to locals and visitors alike. Emphasizing Abiaka’s signature woodfire oven to create delicious, flavorful dishes paired with hand-crafted cocktails and an outstanding wine selection. Chef Aarón Sánchez is an award-winning chef, television personality, author and philanthropist. He is the co-star of “MasterChef” and “MasterChef Junior” on FOX and the host/executive producer of “El Toque de Aarón,” on Discovery Familia and Hogar de HGTV. Chef Sánchez has also been recognized by the Hispanic Federation and National Hispanic Media Coalition as a leader for the Hispanic community.

Dedicated to preserving Latin culture through food and encouraging diversity in the kitchen, he launched the Aarón Sánchez Impact Fund – a nonprofit whose mission is to uplift Latin youth through education and mentorship. Chef Sánchez is also the co-founder and creative director of Cocina, a media production company that creates and shares stories representing the best of Latin culture.

Highlights from chef Sánchez’s pop-up menu, available to order à la carte, will include Tuna Tostadas, a perfectly layered one-bite starter that has everything to start a meal – texture, acidity a bit of heat and buttery caviar for a smooth finish; Pork Ribs Al Pastor, an elevated play on the classic tacos al pastor with mesquite smoked baby back ribs with a guajillo Chile glaze and served with pineapple salsa and salsa verde; El Pato Chulo, Aarón’s version of duck three ways, utilizing traditional techniques and ingredients in an innovative new presentation: mole spiced duck breast, duck leg carnitas and seared foie gras, served over street corn grits with tamarind jus.

During the pop-up, Abiaka will also offer some of its signature selections, like jamon toast featuring Jamon Iberico de Bellota on toasted bread, with olives, roasted garlic and red wine jams; tenderloin with whipped potatoes and aji panca jus; skirt steak with spiced rub and house sauces; and Halibut with veracruzana sauce. Signature sides include Abiaka ratatouille with garden vegetables, Manchego and fried egg and salt-roasted potatoes with mojo verde and roasted garlic aioli.

Led by Director of Creative Culinary, Chef Robert Ciborowski, Abiaka is a Latin wood fire grill concept inspired by South Florida’s melting pot of cultures. The restaurant combines the vibrant flavors of Spain, Central and South America and the Caribbean with Florida’s fresh ingredients. Live fire and solid fuel grilling with orangewood and white oak charcoal bring a perfect balance of natural flavors to the forefront. The open-kitchen concept provides a glimpse into the action as chefs grill seafood, meats and fresh produce on open flames using state-of-the-art J&R wood fire grills and Josper coal ovens.

Abiaka is located on the second floor of The Guitar Hotel Pool Vista Pavilion at Seminole Hard Rock Hotel & Casino Hollywood, at 1 Seminole Way in Hollywood, Fla. Dinner is served Wednesday through Sunday starting at 5 p.m.
