Slow Fish Collab Dinner

Chef Allen Susser, Slow Fish Chair of Slow Food Miami kicks off the Collab Series on March 14th, 2024, with an intimate dinner hosted by Chef de Cuisine Diana Tandia of Essensia Restaurant & Bar at The Palms Hotel & Spa, a Snail of Approval honoree since 2011.

Chef Diana, known for her passion for seasonally inspired cuisine, will showcase her expertise in crafting delectable dishes that highlight sustainable seafood available in our oceans. The menu will also feature seafood contributions from South Florida aquaculture sponsors, Sun Shrimp and Blue House Salmon.

You’ll enjoy a delicious 3-course meal including wine, tax and service charge for $125 per person. A portion of each ticket will benefit the Slow Fish Miami program.

In addition to savoring exquisite dishes, attendees will have the chance to view engaging and beautiful films by local nonprofit, Sereia Films. The films tell “seafood stories” about like-minded individuals, including local influencers, chefs, and industry professionals, who share a commitment to sustainability.
