Fish Cheeks, the New York Thai restaurant that has become one of the most beloved dining destinations in the city since opening in 2016, is bringing its first location outside NYC to Wynwood, Miami. The opening is expected in late February 2027.
Founded by Jennifer Saesue and Chat Suansilphong of 55 Hospitality, Fish Cheeks built its reputation on bold, seafood-centric regional Thai flavors — the kind of cooking that prioritizes the fish counter over the wok station and treats Thai cuisine with the same seriousness that New York's best restaurants bring to any other tradition.
The Miami Kitchen
Executive Chef Dustin Everett — whose résumé includes Momofuku Ssäm Bar and Pig & Khao — will lead the Miami kitchen. The menu will serve signature dishes including the iconic Coconut Crab Curry, Zabb Wings, and whole-fish preparations alongside fresh creations built around locally sourced Florida seafood.
The Florida seafood angle is significant. Miami's proximity to the Gulf, the Keys, and the Caribbean gives the kitchen access to ingredients that the New York location can't match — stone crab, Florida spiny lobster, grouper, snapper, and the seasonal catches that define South Florida's culinary identity. The Miami menu will be its own thing, not a replica of the New York original.
The Space
Designed by Space NY, the Wynwood location blends traditional Thai architectural elements with Miami Art Deco geometry and the vibrant spirit of the neighborhood. The design firm's approach — which has defined the visual identity of several of New York's most talked-about restaurants — brings a considered aesthetic to a neighborhood that has seen a lot of design-forward openings in recent years.
Fish Cheeks Wynwood opens late February 2027. The Coconut Crab Curry is coming to Miami.
Wynwood continues to attract serious restaurant operators. Fish Cheeks joins a neighborhood that has evolved from its mural-and-gallery origins into one of Miami's most competitive dining corridors. The late February timing puts the opening squarely in Miami's peak season — expect a wait.
