The exquisite menus feature unique culinary creations from the mind of Michelin – StarChef Jean-George Vongerichten, as well as a carefully curated new cocktail menu at MATADOR BAR, the hotel’s elegant cocktail lounge.

Inspired by its rich history and 1950s glamor, world-renowned Chef Jean-George Vongerichten has reinvented the iconic MATADOR ROOM with reimagined menus that offer his interpretation of Caribbean, Spanish, and Latin and South American cuisines. In spirit of the New Year, immerse your senses in a new seasonal menu crafted to elevate guests’ taste buds and transport them on a multi-sensory culinary journey through the unique flavors of Latin America.

Begin the culinary journey with an array of light yet flavorful appetizers like Arugula & Shaved Brussel Sprouts Salad, Spicy Tuna Tartare, or Corn & Crab Fritters; and for the table, enjoy Sweet Pea Guacamole with Toasted Sunflower Seeds, Antonius Oscietra Caviar and South Pacific Kanpachi Crudo dressed in a sweet & spicy green chili dressing.

Taking culinary excellence to the next level, the new menu features a unique array of pizzas including Avocado & Jalapeno, Black Truffle & Fontina Cheese, and Meyer Lemon, baked to perfection with lemon, ricotta, fontina and parmesan. From Glazed Short Rib Tacos to Roasted Mushroom Tacos; and a variety of grilled dishes such as Charred Beef Tenderloin (broccoli rabe, basil, sesame and chili), Roasted Grouper (yukon gold potato, ravioli and paprika butter) and Seared Snapper (green olive dressing, grilled spring onions, sauteed spinach), the Winter menu has something to satisfy every palette and enhance the senses to a truly sumptuous level.

The al fresco dining experience utilizes only the freshest local ingredients and merges Spanish, Caribbean and South American flavors to create the perfect dishes. A few of the must-try new brunch items include the Smoked Salmon Dill Mascarpone pizza, crafted with an everything bagel crust ($28) ; Crunchy Mexican Spiced French Toast with Caramelized Apple ($24); or on the sweeter side the Coconut Pancakes with fresh Grapefruit and Lavender Maple Syrup ($20). For a crispy golden bite, the Everything Crusted Calamari served with Avocado – Jalapeno Salsa Verde ( $24) is highly recommended.

 Offering a unique twist on classic breakfast favorites for any and all cravings, guests are invited to begin the morning on a healthy note with the Baked Egg Frittata (Broccoli Rabe, Fontina Cheese & Bacon), Steak & Eggs (Patatas Bravas and spicy tangy sauce); or Poached Farm Eggs (Wild mushrooms, Parmesan Cheese, & Herbs). For a sweeter bite, indulge in the Buttermilk Pancakes or an array of freshly baked pastries like Pain au Chocolate, Cinnamon Buns or Pastelitos.

Crafted to excite your palate and elevate your taste buds, the new lunch menu offers an array of light yet flavorful salads like the Kale, Butternut Squash & Red Apple Salad, Warm Shrimp & Truffle Vinaigrette salad, or the Fritto Misto Salad, made with calamari, pink shrimp, cherry pepper and dressed in a rich remoulade dressing ; and an irresistible selection of savory entrees such as the rich Black Truffle & Fontina Cheese Pizza, Honeynut Squash Pizza or Roasted Chicken, served with fingerling potatoes, broccoli rabe and salsa verde.
