
We All Gotta Eat, the innovative hospitality group founded by David and Josh Foulquier, has announced the appointment of renowned chef Roel Alcudia as its new Culinary Director. Alcudia, the mastermind behind acclaimed restaurants like Stissing House and Mandolin Aegean Bistro, will now oversee culinary strategy and innovation across all group concepts, focusing on elevating menus and introducing new, inspired dishes.
A Miami native and a mentor to David Foulquier, Alcudia’s return to the city marks a full-circle moment. With more than two decades of experience working with top chefs including Scott Bryan and Jonathan Waxman, Alcudia has a proven track record of crafting ingredient-driven Cuisine rooted in culture and community.
Most recently, Alcudia led Stissing House in New York’s Hudson Valley—named one of The New York Times’ “50 Best Restaurants” and a James Beard semifinalist. His prior Miami roles include serving as Corporate Executive Chef for Groot Hospitality, where he shaped menus at hotspots like Komodo and Papi Steak, and leading culinary direction at Mandolin Aegean Bistro, now expanding internationally with Soho House.
In his new role, Alcudia will work closely with the Foulquier team to refine and develop the group’s culinary identity across locations, emphasizing seasonality, technique, and thoughtful menu curation.
