The renowned restaurant group Major Food Group (MFG) has opened CARBONE RIVIERA at Bellagio, marking a new chapter for the iconic CARBONE brand. Set in the former Picasso space, the restaurant offers a glamorous take on Italian coastal dining, inspired by the Riviera’s golden era, with interiors designed by Martin Brudnizki and art from Picasso, Miró, and Renoir.
A Premier Seafood Experience
CARBONE RIVIERA features a sophisticated menu centered on its first-ever whole-fish program, offering options like Sea Bream, Red Snapper, Dover Sole, and Branzino, prepared over Japanese charcoal or baked in salt crust, with table-side service and ceremony. It also includes elevated crudo, antipasti, pastas, and classic dishes like Spicy Rigatoni Vodka and steaks from Snake River Farms.
Unmatched Views & Design
Guests enjoy stunning views of the Bellagio Fountains from the 240-seat space, which boasts Mediterranean-inspired decor with terracotta, gold accents, Murano glass chandeliers, and outdoor terraces. The ambiance blends Vegas spectacle with Riviera elegance. A special feature is the Fortuna Riva yacht docked on the patio, offering an exclusive experience of the fountains from a luxury vessel.
Exceptional Beverage Program
The restaurant’s wine list highlights Champagne, White Burgundy, and Italian whites, paired with a curated cocktail menu inspired by Italy’s coast, including signature drinks like the Pistachio Colada and Strawberry Pomodoro.
