Oltremare Ristorante at Amara Cay Resort has earned the distinction as the first restaurant in The Florida Keys in the Florida Department of Agriculture’s Fresh From Florida program. Restaurants are chosen for this exclusive program, which supports thousands of small local farmers and vendors, through an approval process that certifies the sourcing of local products from Florida.
Since its inception in 2014, Oltremare has strived to maintain a level of sustainability that promotes local farmers and fishermen. The restaurant is one of less than 100 restaurants participating in this statewide initiative. Oltremare vows to continue its dedication and promotion of using local ingredients in its carefully crafted menu. Executed by Chef Dario Olivera, the Italian and island-inspired menu features fresh produce, fish and ingredients from Florida. Steering away from the typical seafood-centric Florida Keys menu, Oltremare offers a wide variety of Italian-based dishes as well as fresh seafood plates. 
“The use of local ingredients enhances the flavors and freshness of the delectable entrees, pastas, colorful selection of salads and vegetables on the menu served against the backdrop of Islamorada’s picturesque views. We offer a full sensory experience for guests with our unique flavors, sights and aromas,” said Chef Dario Olivera.
