The culinary team of Town Kitchen Management, Inc. (TKM), innovators of the highly-successful Smoke’t Southern Kitchen & Tap (Smoke’t) and TOWN Kitchen & Bar (TOWN), announced today the debut of their latest “neighborhood joint”: sake blue asian kitchen & bar (sake blue) located in The Collection building next to Village of Merrick Park at 225 Altara Avenue in Coral Gables. Inspired from several trips to New York City, Las Vegas, and San Francisco, the partners visited many Asian-influenced neighborhood sake “joints” established by talented Chefs who created high-quality food. sake blue asian kitchen & bar will dish progressive twists on classic Asian delicacies considered global comfort foods.

New to the TKM team is well-known local Chef Robert Pagan. Robert brings a wealth of culinary skill to sake blue’s table. Executive Chef Robert Pagan began his career as the protégé of renowned Chef Jonathan Eismann of Pacific Time and worked along with Miami’s star Chef Douglas Rodriguez. Chef Robert most recently provided consulting services and collaborated in the openings of Miami hot spot restaurants such as Sugarcane. With the help of his extraordinary kitchen team, Chef Robert plans to take guests on a sensory adventure through Asia.

“This new TKM restaurant concept is a collaborative effort between management, front-of-house and the kitchen,” Says Chef Robert. “We all share the common goal of providing quality food and friendly service in a comfortable yet chic and innovative environment. We have put our heart and soul into this brainchild and we’re excited to share our masterpiece with friends, family and new customers.”

At 5,000 sq. ft., sake blue has capacity for more than 200 guests. The large space is divided into special rooms creating an intimate and sophisticated ambiance for guests. The deep colored walls are masked with paisley frames and asian-themed artwork by artist Hans Feyerabend. Upon arrival, guests are greeted near the double sided thirty-eight foot, full-service bar that leads into the spacious full-service lounge with available bottle service. Next to the lounge is a private room created for corporate meetings, parties or dinners. At the center of the restaurant is the dining room that features a Chef’s table next to the bar where the Sushi Chef will be showcasing his Asian delights. Off to the center of the dining room is sake blue’s highlighted space, the Private Sake Room where hundreds of sakes will be displayed and surrounded by dragon murals on the walls and ceilings by famed graffiti artist Jona Carminske. The room will be available for tastings or private events. Outside seating is also available where guests will feel a sense of exclusivity and privacy because of the restaurants location. Every room provides a comfortable atmosphere for all the guests whether they are looking for happy hour cocktails after a long day of work or a romantic dinner for two. The restaurant will also feature a club-style sound system spreading electronic, house beats from all genres of music by resident DJ Brooke G on Fridays and Saturdays.
