Grand Opening of Dean Max’s 3800 Ocean

Nationally recognized by the James Beard Foundation as a “Great Regional Chef of America,” seafood provocateur, Chef Dean James Max, announces his second modern-American restaurant in South Florida, 3800 Ocean, at the Palm Beach Marriott Singer Island Beach Resort & Spa.  The May 11th opening is the official open-to-the-public push complementing the restaurants soft opening earlier this year in January.   Much like its sister restaurant, 3030 Ocean, in Fort Lauderdale,  3800 Ocean will feature a seafood-driven menu with an emphasis on sophisticated, yet simple American creations.

With fresh-from-the-ocean sustainable oysters, clams, fish and crab and ingredients from Swank Specialty Produce’s hydroponic farm, the menu changes weekly and includes raw bar, small plates and large plates options.  Menu items change weekly and are inspired by season and availability, artisanal favorites include Roasted Kabocha Pumpkin  Soup with Peekytoe Crab Salad ($13), Ahi Coconut Tuna Ceviche with cilantro, Serrano peppers, green onions and coconut sauce ($15) and Apricot Glazed Grilled Mahi with Yukon gold potato puree, brocollini, cippolini onion and coconut curry sauce ($26).

 

“Modern cuisine embraces a dedication to simplicity, freshness and intensity of flavor,” says Max. “Sourcing is the key. My cuisine relies more on balancing flavors than on heavy spicing so finding the best ingredients available is a must.”

 

Joining Max in this kitchen is his local Executive Chef, Larry LaValley, formerly of DeVito South Beach and Nemo.  “We are excited to be a part of the northern migration of great restaurants hitting Palm Beach County,” says LaValley.  “Our goal is to share our best-of-the-best culinary approach with our locals delighting them with quality ingredients and sustainable practices.”

 

Crowned by the Great American Seafood Cook-off 2010 as the “King of American Seafood,” Max invites his Palm Beach guests to interact with his staff through an open kitchen.   The dining room offers stunning views that pay homage to Max’s muse and the inspiration of his first cookbook “A Life By the Sea: the Atlantic Ocean.”
