The Biltmore Hotel’s Culinary Academy is now offering a Culinary Boot Camp starting in January 2010. The program offers a unique opportunity that combines a luxury holiday while learning culinary arts along such masters as Chef Philippe Ruiz who oversees the resort’s Palme d’Or, named the top restaurant for food, decor and service by Zagat in their 2010 Miami / So. Florida Restaurants survey. Students will learn the details, ingredients and presentation behind culinary masterpieces through daily classes in the academy’s kitchen lab, wine tasting seminars and behind-the-scene access in a professional kitchen.
The program consists of a week-long camp or a weekend camp and curriculum includes basic training in knife skills & butchery, pantry, herbs & spices, Italian technique, cold kitchen, meats, seafood and poultry & grains. The Biltmore Culinary Academy is showcased in a 700-square-foot custom designed kitchen lab with a 12-burner stainless steel JADE range island.
“Intense hands-on training is the best way to learn the culinary arts,” said Lourdes Castro, the Culinary Academy’s director. “Our boot camp is the perfect option for the enthusiast who is looking for a comprehensive curriculum taught by working chefs in a dedicated professional kitchen without the commitment of enrolling in culinary school.”
The culinary boot camps offer up to 37 hours of instruction. A package for local residents without a hotel stay and daily meals is available upon request. The all-inclusive program is priced at $3,750 for the week-long camp on January 18th to 22nd and $2,175 for the weekend camp on February 5th to 7th, both include deluxe accommodations and daily meals at the Biltmore’s award-winning dining destinations, beverages, tax and gratuities. Students enrolling before December 23rd, 2009 receive 10% off the registration fee. Enrollment is limited to 8 students.
