PINCHO Goes Back to Its Roots with Build Your Own Bowl and a New Seasonal Menu

If you haven't been to PINCHO lately, the Miami-born fast-casual brand has been quietly doing something worth paying attention to. Rather than chasing trends, PINCHO is leaning harder into what made it stand out in the first place: Latin-inspired flavors and scratch-made cooking — and that focus is now shaping everything from the menu to the brand's next chapter of growth.
The brand recently launched its Build Your Own Bowl (BYOB) concept, which has quickly become a central pillar of its strategy — and a meaningful driver of sales. The format gives guests the freedom to mix and match proteins, bases, toppings, and sauces, all rooted in the Latin pantry that has always been at PINCHO's core.
Building on that momentum, PINCHO is now moving to a rotating seasonal menu designed to give the brand more room to spotlight its Latin-inspired ingredients throughout the year. The first seasonal offering is the Cosecha (Harvest) Bowl, available through November. It features Latin-style roasted sweet potatoes, flame-roasted corn, grilled poblano peppers and onions, Bravas and Aioli sauces, and cilantro — with a choice of protein. Several of those same ingredients are also available à la carte through the BYOB menu for guests who want to build their own combination.
The menu evolution is part of a broader growth story at PINCHO. The brand has also renewed its focus on catering, with streamlined online ordering and a Catering Rewards program that automatically earns customers Amazon Gift Card rewards on qualifying orders — a practical perk for office teams, event planners, and anyone feeding a crowd.
For a brand born in Miami, the return to its Latin roots feels less like a pivot and more like a homecoming — and the numbers suggest South Florida diners are here for it.
