Enjoy MICHELIN-starred cuisine from Chef Sebastián Vargas at Seminole Hard Rock Hollywood for a limited four nights only
Abiaka Wood Fire Grill is pleased to announce the latest pop-up in their guest chef pop-up series: Miami-based Chef Sebastián Vargas of MICHELIN-starred and Green Star-awarded restaurant Los Félix will be offering an exclusive culinary experience at Abiaka from Thursday, Feb. 20 through Sunday, Feb. 23. The exclusive four-night pop-up will give guests a glimpse into the Los Félix menu, which explores the history and significance of corn throughout the Americas.
At Los Félix, Chef Sebastián’s menu honors the indigenous roots of corn by supporting farmers who use the milpa agriculture system, an ancestral tradition native to Mesoamerica. Through milpa, in which farmers use sustainable methods to cultivate the soil while honoring the sacred connection between self and land, Los Félix spotlights native ingredients like heirloom corn, cacao, chiles, squash, and fresh maize ground in-house. This commitment to tradition and seasonality results in an ever-evolving menu that includes small plates, entrees, and shareables for the table. Sample dishes available at the Los Félix pop-up will include Smoked Trumpet Mushrooms with Pickled Beach Mushrooms, Potato, Truffle, Corn, and Coffee Oil; Grilled Crab Arepa with Smoked Corn, Charred Plantain Leaves, and Coconut Oil; Grass-fed Shortrib Tamal with Prunes, Hazelnuts, and Green Picadillo; and Pork Cheek Carnitas served with fresh tortillas.
Chef Sebastián Vargas, a native of Colombia, first found culinary inspiration while perusing the markets of New Delhi, India. He subsequently enrolled in the Culinary Institute of America and later went on to train under some of the most talented chefs in the world, including Massimo Bottura (Osteria Francescana), Daniel Humm (Eleven Madison Park) and Magnus Nilssen (Faviken). In 2020, he joined forces with Josh Hackler and Pili Restrepo Hackler to co-found Grassfed Culture Hospitality and open Los Félix and sister concept Krüs Kitchen in Miami’s Coconut Grove neighborhood.

Led by the resort’s Culinary Director, Chef Robert Ciborowski, Abiaka is a Latin wood fire grill concept inspired by South Florida’s melting pot of cultures. The restaurant combines the vibrant flavors of Spain, Central and South America and the Caribbean with Florida’s fresh ingredients. Live fire and solid fuel grilling with orangewood and white oak charcoal bring a perfect balance of natural flavors to the forefront. The open-kitchen concept provides a glimpse into the action as chefs grill seafood, meats and fresh produce on open flames using state-of-the-art J&R wood fire grills and Josper coal ovens.
Abiaka is located on the second floor of The Guitar Hotel Pool Vista Pavilion at Seminole Hard Rock Hotel & Casino Hollywood, at 1 Seminole Way in Hollywood, Fla. Dinner is served Wednesday through Sunday starting at 5 p.m.
