Following a successful debut last summer, ANNUA Signature Hotels has just reopened its intimate estate hotel nestled in the rural heartland of Mallorca, welcoming guests to an experience defined by landscape, memory, and material — now enhanced with exciting new offerings. This season, Son Xotano introduces El Celler, a refined underground cave restaurant concept, showcasing the island’s finest produce, alongside a dedicated programme of Pilates and yoga retreats, establishing the estate as a destination for both immersive gastronomy and holistic wellbeing.
Located just outside the rural inland village of Sencelles, just 25 minutes from Palma de Mallorca Airport, the 22-key hotel is surrounded by ancient olive trees, working vineyards, and lavender-swept fields. With the arrival of the new season, Son Xotano returns as a sanctuary of presence and quiet luxury — reaffirming Annua’s philosophy of design grounded in place and hospitality shaped by stillness rather than spectacle.

A Return to the Rhythm of the Land
As summer light arrives over the Mallorcan countryside, Son Xotano reopens in harmony with the island’s natural rhythm. Lime-washed stone walls glow in the afternoon sun, pergolas cast shifting shadows across terracotta courtyards, and the scent of rosemary and fig drifts through open windows.

The vision for Son Xotano began with emotion. “We wanted to create a space that felt like a homecoming,” says Álvaro Sasiambarrena, co-founder and creative director of ANNUA Signature Hotels. “A place where every texture, every scent, every silence evokes something essential — something remembered.”

Ahead of the estate’s 2025 opening, Sasiambarrena brought together an exceptional creative team from across Spain and the Balearics. Architectural restoration was led by ClapésPizà, a Mallorca-based studio headed by Adrià Clapés and Joan Pizà, known for their sensitive approach to historic structures. The interior design, led by long-time ANNUA collaborator Virginia Nieto, draws on the island’s materials and traditions — Mallorcan clay, pine, linen, and brushed metal — creating a quietly sensorial language that complements the estate’s architecture.

The result is an authentic expression of the 12th-century manor house, where marès sandstone, exposed beams, and restored dry-stone features anchor the experience in place while interiors invite pause and reflection.

Restful Interiors and Private Retreats
While the hotel invites solitude, it also creates moments of gentle gathering. At its heart is a restored lobby that feels more like a private home than a hotel entrance — quiet, elegant, unhurried. Just beyond, the piazza acts as a kind of informal town square, bringing together rooms, pathways, and culinary spaces in a natural architectural choreography.

Son Xotano offers 22 guest rooms, including 14 suites, each defined by natural light, noble materials, and understated elegance. Linen, Mallorcan clay, pine, brushed metal, and hand-crafted ceramics create a tactile calm throughout.
Many rooms open onto private gardens, loggias, or terraces, while select suites feature plunge pools, fireplaces, and freestanding bathtubs. Bathrooms include sandstone basins, matte brass fixtures, and walk-in rain showers, complemented by carefully curated amenities that enhance the sensory experience without distraction. Light remains the estate’s most constant collaborator, filtering softly through wooden shutters and animating interiors from morning to dusk.

Seasonal Gastronomy
Dining unfolds in El Celler, the estate’s newly introduced historic wine cellar restaurant, and in the vine-covered piazza, where long, sun-drenched lunches and candlelit dinners celebrate Mallorcan produce with emotional precision. New for this season, the culinary offering introduces an open kitchen concept, bringing guests closer than ever to the creative process behind each dish. Designed to foster a greater sense of connection and authenticity, the open kitchen places the culinary team at the heart of the dining experience, allowing guests to observe the craft, technique and care that define the restaurant’s seasonal menus.
The menu draws on the estate’s gardens and nearby farms, showcasing seasonal vegetables, fresh herbs, and locally sourced produce. Dishes are rooted in traditional Mallorcan flavours while interpreted with contemporary refinement, highlighting the natural quality of each ingredient. Guests can enjoy meals on shaded terraces or in the sunlit piazza, where the relaxed, al fresco setting complements the estate’s historic architecture and tranquil gardens.
The poolside terrace provides a relaxed backdrop for breakfast, light meals, or casual dining, where guests can soak in the sun and take in the serene atmosphere of the estate. Intimate bars and lounges complement the experience with carefully curated aperitifs and evening drinks. Every dining experience at Son Xotano reflects the estate’s ethos of seasonality, provenance, and connection to place, making it as much a culinary destination as a retreat.

Rather than a conventional spa, Son Xotano once again offers an intuitive approach to wellbeing. Treatments take place in shaded garden patios and pine-sheltered spaces, with personalised therapies designed around stillness and balance.
