As plant-based dining grows in popularity, Sexy Fish Miami’s Chef Douglas Santi has unveiled five new dishes that will entice vegans and non-vegans alike. With an emphasis on quality, artistry and technique, these indulgent, vegan-friendly plates span Roasted Cauliflower with Peanuts, Roasted Pumpkin with Kimchi, Grilled Vegetables, a vegetarian Sekushi Midori Omakase, plus 9 Pickles. These new offerings are on top of existing standouts like Crispy Truffled Tofu Salad (V), Vegan Sushi (VG), Grilled Broccolini with Spicy Miso Quinoa (VG) and Grilled Sweet Potato with Coconut Wasabi (VG).

 

While vegans and vegetarians are often an after-thought at many restaurants, Chef Director Douglas Santi has meticulously crafted these new recipes to reflect Sexy Fish’s world-famous culinary approach. Each dish is beautifully plated, a nod to Sexy Fish’s stunning interiors and artwork, and the textures, colors and flavors of the vegetables are treated with the highest respect.

Complementing Sexy Fish’s flavor profile, the new items feature fresh and authentic Asian ingredients. Diners can enjoy an entire vegan meal, or harmoniously switch to seafood and meat between courses without skipping a beat.

Standout dishes include the Roasted Cauliflower. Fresh cauliflower florets are marinated in miso, lightly roasted and served with peanuts, lettuce, baby cilantro, serrano peppers, sesame seeds, jalapeno sauce and wasabi cream.

Also featured is the Roasted Pumpkin, four delicious pieces of the earthy squash are glazed with honey and rice syrup and paired with homemade vegan kimchi and dollops of herb puree for an umami explosion.

A spin on a Japanese tradition is 9 Pickles, a selection of seasonal homemade pickles. Served in an elegant wood box, nine glass bowls are filled with an assortment of pickled jalapeno slices, enoki mushrooms, tomatoes and onions.

And while Grilled Vegetables are a common choice for vegans, Sexy Fish’s version is grilled on the robata, dressed with yuzu and olive sauce and served over a creamy dashi. Vegetables will change seasonally, such as asparagus, carrots and eggplant.

 

The new vegetarian Sekushi Midori Omakase features a selection of pickles, mushroom miso soup, grilled vegetables with greens and yuzu, eryngii mushroom tempura, carmelized pumpkin & kimchi, edamame gyoza, vegan sushi, roasted cauliflower, crispy truffled tofu, pickled beetroot and a chocolate pot.
