“The Cajun marinated rib eye is one of our guest-favorite steaks served in the summer, and it’s been a staple steak dish at Smith & Wollensky for several years, due to its popularity,” said Matt King. “And it’s easy to make it at home for a barbecue, the only prep is the steak marinating for a lengthy amount of time – 48 hours in advance -which is key for adding to its tenderness and penetrating the Cajun flavor. The steak gets marinated with Cajun seasoning, onions, and a little bit of oil. It’s great when grilled – the rub and marinade create a really nice char and crust, with just a little bit of heat to it.”

King adds, “it goes really well with a creamy corn dish we serve on the summer menu. If you are doing this at home, all it takes is some nice summer corn, cream, Manchego cheese and a little bit of ancho chili butter, for another kick of heat that stands up to the steak main dish.”
