Elior North America (ENA) Dining and Events launches Landmark Experiences, a new initiative for the catering brand, redefining luxury hospitality at the nation’s most prestigious large-scale, on-location events. With a presence spanning major citywide celebrations and high-profile gatherings, from Grand Prix paddocks to exclusive VIP lounges, Landmark Experiences brings immersion and sophistication to the art of large-scale catering, delivering elevated culinary experiences that serve thousands of guests daily. This new initiative is a result of the nationwide collaborative effort of the brands that make up ENA’S Dining & Events segment, including Constellation Culinary Group, Abigail Kirsch, Design Cuisine, Corporate Chefs and Lancer Hospitality. These five brands use their power, innovation and expertise to be an impactful event solution for large-scale events, from the visioning stage all the way to execution.
At the heart of Landmark Experiences is Nicole Hernandez, a seasoned leader who has shaped this new entity from the ground up. A proud first-generation Cuban American raised in Miami, Nicole brings her love of food and deep cultural understanding into every event. Her professional journey began with ENA in 2013, and she has spent nearly three years in her current leadership role. Her responsibilities span from pitch to execution: she hires and trains event teams nationwide, opens catering divisions across all ENA’s Dining & Events brands, collaborates on marketing and sales strategies and ensures that Landmark’s execution meets the highest standards.
“Landmark Experiences was created to orchestrate hospitality on an unparalleled scale,” said Nicole, the visionary behind Landmark Experiences. “From exclusive VIP lounges to immersive, high-energy hospitality suites, our team serves thousands of guests, offering a new level of indulgence, precision and culinary excellence that enhances the magnitude of the occasion.”
The launch of Landmark Experiences follows the triumphant presence at the Miami Grand Prix, where ENA’s Dining Events brands have been premier hospitality partners for four consecutive years. At this year’s race, the team curated elevated culinary activations for over 2,000 high-profile guests and celebrities, offering special meals that rivaled the exclusivity of the sporting event itself.
Other event clients in Landmark Experience’s portfolio includes the Mubadala Citi DC Open in Washington, D.C. Year over year, the team manages the full hospitality program for the 10-day tennis tournament, including VIP suites, sponsorship lounges, specialty cocktails, and collaborative events with celebrity chefs and local restaurants—serving over 50,000 patrons.
Another great example of Landmark Experience’s success in culinary expertise and local footprint across various regions is the team’s work at Preakness Stakes in Baltimore, MD. Landmark Experiences’ team in Washington D.C. provided exceptional food and beverage for more than 10,000 guests at Pimlico Race Course over three days, with custom-curated menus in premium clubhouse seating. Additionally, the team partnered with the Veuve Clicquot Polo Classic for five years, delivering elegant dining and champagne service to a stylish, high-society crowd. The team has produced high-end activations for over 3,000 elite guests at the Super Bowl Tailgate Experiences in Minnesota, Miami, and Arizona.
From the outset, Landmark’s process is rooted in collaboration. Beginning with the client’s vision board, the seasoned team helps transform ideas into executable realities. This means crafting creative concepts that are grounded in operational logistics, working hand-in-hand with planners, venue partners, catering teams, well-known dining establishments within the destination, local vendors, purveyors and food producers. Catering is integrated into the planning process from day one, and the Landmark Experiences team often collaborates with local restaurant vendors, celebrity chefs, regional farms or external food production managers when clients desire an experience that attendees will know and recognize. Landmark’s extensive expertise fills the operational gaps—whether managing flow and service for 15,000 guests or working in tandem with a restaurant that lacks the capacity to scale.
Every event begins with immersion in the destination. The team visits each host city, conducting culinary tours to understand what drives the food culture—from iconic institutions to family-run establishments. Local farmers, purveyors, and vendors are brought into the fold to source fresh, regional ingredients, which inspire custom menus rooted in seasonality, authenticity and creativity. Whether it’s mango season in Miami, summer peaches in Georgia, California citrus or fresh apple season in New York, Landmark Experiences makes each event menu deeply connected to its location. Even concession-style offerings receive an upscale twist—hot dogs on artisan buns, BBQ curated by local culinary stars, and handmade pastries with authentic cultural flair.
To support large-scale events, Landmark builds out temporary infrastructure on-site: mobile kitchens, refrigeration and dry storage, beverage and ice stations, chef holding zones, décor installations and more. Events are designed with both guest-facing aesthetics and back-of-house functionality, including custom décor like pasta walls or live-action cooking stations. Safety and compliance are essential to every operation. Staff are trained in food hazard protocols, allergen awareness, and fire safety procedures, ready to accommodate a full range of dietary and venue-specific challenges. Guest flow, station placement, and alternate service routes are carefully mapped to ensure seamless service—even during time-sensitive moments like intermissions or halftimes.
