Chef Mitchell Hesse taking the helm at Delilah Miami, this week, the Brickell supper club has officially unveiled Hesse’s first culinary creations with a new menu that captures Miami flavors and honors Delilah’s signature elegance.
From the moment the first plates arrive, Chef Hesse’s global influences come through—Mediterranean brightness, Japanese precision and Persian spice layered into dishes that are as inviting as they are beautiful. His approach is both elevated and approachable, designed for evenings that linger over conversation, music and flavor.
New menu highlights include a refresh of Delilah’s famed Seafood Tower, now a dazzling centerpiece with shrimp, oysters, lobster, hiramasa ceviche, crab salad, tuna, dill aioli, Delilah mignonette and cocktail sauce. Two new, refreshing salads join the menu including the Avocado & Citrus Salad with seasonal citrus, mizuna, shiso and raspberry vinaigrette, and Tomato & Mozzarella Salad with jalapeño pickled watermelon, vincotto and extra virgin olive oil.
Small plates invite sharing, from the Twice Cooked Octopus appetizer with potato, fennel, olives, peppers and harissa aioli to sides that shine on their own: Charred Corn with leeks, pickled jalapeños, chives and cilantro, and Roasted Squash with cherry tomato, cippolini, truffle, garlic and macadamia nuts.
Chef Hesse’s entrées are equally expressive. Guests will find comforting yet indulgent additions like the Lobster Mafaldine with zucchini, spicy vodka sauce and crispy basil and seasonal Roasted Chicken with farro, butternut squash, leeks and truffle chicken jus; alongside dishes like the Pan Seared Snapper with summer caponata, clams and soft herbs and Roasted Cauliflower dressed in salsa verde, pomegranate yogurt and pickled shallot.
To finish, a new delicate Lemon Olive Oil Cake offers a bright, elegant finale.
