Cobalt at Vero Beach unveils its dining room for a romantic Valentine's Day

Cobalt exteriorFor Miami residents looking to escape, Cobalt at Kimpton’s Vero Beach Hotel is hosting a romantic Valentine’s Day dinner in honor of Cupid and Psyche Sunday, February 14. Casually elegant, the dining room’s West Indies-style décor creates an air of timeless sophistication, while floor-to-ceiling windows offer unobstructed views of the Atlantic Ocean.

The prix fixe menu begins with romantic options such as ½ dozen Fanny Bay Oysters with apple mignonette and lemon preserves or Pan Roasted Scallops with cauliflower puree, baby carrot and bacon syrup.  Entrees include Veal Sweetbreads and Maine Lobster with potato gnocchi, Hen of the Woods Mushrooms, chervil and cream or Pan Sautéed Triggerfish with creamed spinach, local sweet onions, capers and browned butter.  Sweet endings include Bitter Chocolate Panna Cotta with vanilla bean ice cream and chocolate crumble or Profiteroles with rum and coke ice cream, bananas and peanuts.  Price is $75 per person ++ and begins with a Champagne toast.
