The vibrant spirit of the Colombian coast comes to Miami with the opening of Cartagena at SLS South Beach this October. Created by acclaimed Chef Juan Manuel Barrientos, known for his Michelin-starred Elcielo, this new restaurant offers a culinary journey inspired by the rich flavors and cultural heritage of Cartagena De Indias.
Following the success of Chef Barrientos’ Elcielo pop-up, Cartagena features a menu that reflects Colombia’s diverse tropical regions, blending Indigenous, European, and African influences. Signature dishes include Corn Bunuelos, Ropa Vieja Croquetas, Chicharron Ceviche, and innovative offerings like Smoked Wagyu Nigiri and Lobster Roll, creating a feast that transports diners through Colombia’s culinary landscape.

In addition to the enticing food, Cartagena presents an artistic cocktail menu highlighting seasonal fruits and botanical notes, featuring drinks such as the Herbal Old Fashioned and Cholon Sour.
