Artisan Beach House at The Ritz-Carlton Bal Harbour, Miami Unveils New Menus Inspired by Coastal Flavors of the Basque and Mediterranean Regions

The Ritz-Carlton Bal Harbour, Miami announces the debut of new lunch and dinner menus at its signature waterfront restaurant, Artisan Beach House, thoughtfully curated by Director of Food & Beverage and Culinary, Ilkay Suuctugu, and her culinary team. Drawing inspiration from the vibrant culinary traditions of the Basque and Mediterranean coasts, the menus celebrate bold, bright flavors, freshly sourced seafood, and the joy of gathering around the table.

 

“The decision to change the menu transpired from wanting to re-energize the dining experience at Artisan Beach House and showcase more seasonal and locally inspired ingredients,” says Ilkay Suuctugu. “Located at the edge of the Atlantic, our restaurant is defined by its connection to the water – a place to come together, to share, and to savor. Each dish is influenced by the traditions of Spanish coastal cuisine, celebrating seafood and craftsmanship. Every flavor is meant to reflect both our surroundings and the warmth of sharing a meal with friends.”

 

Launching November 3rd, the new menus are the result of a months-long collaborative process between Suuctugu and her culinary team.

 

Highlights from the new dinner menu include:

  • Arroz de Marisco, a sophisticated interpretation of seafood paella, abundant with coastal flavor and ideal for sharing.

  • Bacalao A La Vizcaina, featuring grilled artichoke and a pepper-tomato sauce that pays homage to Basque culinary heritage.

  • Burnt Basque Cheesecake, intentionally burnt to achieve a caramelized exterior and creamy interior for a delicate balance of richness and smokiness.

  • Manchego & Guava Paleta, a playful dessert of manchego cheese mousse, guava gel, white chocolate, coffee sponge, and milk crumble.

 

The lunch menu, open to both hotel guests and the general public, complements these new dinner offerings with light, flavorful dishes and shareable plates that reflect Miami’s coastal spirit. Guests can enjoy starters like Key West Whitefish Ceviche with Leche de Tigre and Cancha, Tuna Tartare with avocado mousse and Fresno pepper, and Short Rib Empanadas with spicy chimichurri. Entrées include the Guava Chili Glazed Salmon, Achiote Grilled Shrimp Tacos, and a Grilled Churrasco with patatas bravas and chimichurri.

 

Sustainability and regional sourcing are also at the forefront of Suuctugu’s culinary philosophy. The new menus feature Mary’s Organic Chicken, local Florida shrimp, and fresh fish from Key West, underscoring a commitment to organic, high-quality proteins and local purveyors. Beyond sourcing, the menu design itself is mindful, with dishes intentionally created to minimize waste and highlight peak-season flavors.
