The Nicklaus Children’s Hospital Charity Gala Consisted of a Cocktail Hour, a Ribbon-Cutting Ceremony, Live Entertainment, and a 3-Course Dinner in celebration of CVI.CHE 105’s fifth location.
CVI.CHE 105 proudly marked the grand opening of its fifth location at The Plaza Coral Gables (111 Palermo Ave #108, Coral Gables, FL 33134) on Saturday, December 16th, 2023. The charity gala, hosted by Laurie Jennings and Elizabeth Lopez and featuring a performance by DJ ZOG, benefitted the Inflammatory Bowel Disease Research Center at Nicklaus Children’s Hospital.
Juan Chipoco, the visionary and chef behind CVI.CHE 105, unveiled a newly designed restaurant with a majestic 20-foot-tall ceiling and opulent gold décor, creating a luxurious atmosphere and paying homage to Peruvian heritage.
The event’s guest list was a testament to the restaurant’s stature, featuring influential figures from both local and international arenas. Among the attendees were the ex-Vice President of Peru, politicians, Peruvian and Colombian consulates, and a variety of Miami’s most prominent business leaders.

In addition to showcasing the restaurant’s refreshed identity, we dedicated the evening to creating a positive impact in our community, all while celebrating the rich tapestry of Peruvian culture,” said Chef Juan Chipoco. “We extend our gratitude to our friends, family, and the Coral Gables community for their overwhelming support of CVI.CHE 105, as we collectively shared a commitment to making a meaningful difference in children’s health.”
Chipoco, often referred to as “The King of Ceviche,” has garnered international recognition for his culinary ventures, most notably with the nine-time award-winning CVI.CHE 105. His influence resonates beyond the United States, positioning Chipoco as a global force in the restaurant industry and the Peruvian gastronomic scene with successful establishments Pollos y Jarras, and INTI.MO.
CVI.CHE 105 looks ahead with anticipation to upcoming openings in Broward, specifically at Sawgrass Mills Mall and Boca Town Center, eager to continue its mission of providing exceptional Peruvian culinary experiences while contributing to charitable causes and the community.
