KLIMA RESTAURANT AND BAR OPENS IN MIAMI BEACH

KLIMA Restaurant and BarKLIMA Miami, a progressive ideology in hospitality originating from Spain, announces the highly anticipated opening of KLIMA Restaurant and Bar – a culinary concept inspired by contemporary gastronomy from Barcelona. The newly renovated 70-seat restaurant property comprises of indoor and outdoor patio dining areas that span over a spacious and breezy 5,200 square feet. Executive Chef David “Rusti” Rustarazooffers a unique menu with a blend of contemporary and international cuisine inspired by Barcelona. The culinary vision for KLIMA Restaurant and Bar reflects the roots of the founders, Pablo Fernández-Valdés and Yago Giner, while combining the very best in local ingredients sourced from premium South Florida suppliers.

“We are very pleased to finally welcome guests to our inaugural restaurant project that we have been developing over the last two years,” says co-founder and managing partner of KLIMA Miami, Pablo Fernández-Valdés.  “The concept upon which KLIMA is based reflects the perfect marriage between our own Spanish heritage and the rich cultural diversity that South Florida attracts. We feel our contemporary menu of Barcelona-inspired cuisine compliments our casual yet elegant interior design that brings a comforting and warm aesthetic we hope allows our local and international guests to feel at home.”

Executive Chef David “Rusti” Rustarazo delivers an eclectic menu of seasonal seafood, meats and pasta dishes presented with a simplistic style – inspired by the techniques and flavors from the principality of Catalonia and the western Mediterranean coastal region. Example appetizers include Tuna toast with chipotle, leek and lime ($20); 5 Jotas Iberian ham with Pata Negra bread and fresh tomatoes ($38); Oysters with Ponzu sauce and salmon roe ($3.50 each) and Salmorejo with quail egg($18).  Example salads include Fennel with burrata, Kalamata and dried tomatoe ($19); Tuna belly, tomatoe and spring onion ($20) and Bresaola with artichokes and aged parmesan ($18). Options from the Raw Bar include White fish ceviche with avocado, Chilean green onion, salmon roe and Togarashi($26); Beef Carpaccio, Foie and truffle ($30) and Roast Beef with tubers, mustard tofu and Japanese sauce ($26).

Pasta entrées include Rigatoni stuffed with lobster and stew ($30) and Veal stuffed Cannelloni Oporto with parmesan ($34).  Fresh fish entrées include Black cod with spinach pesto and haricote verte($34); Red snapper with vegetables, Peruvian causa and orange roasted chicken glacé ($32) and Fish of the day with garrison ($34).  Meat dishes include Rib eye with smoked eggplant and mustard($42); Spring chicken with “Escalivada” ($26); Pork ribs with fingerling potatoes, garlic and shallots($32); Lamb shoulder with potato parmentier ($42) and Chicken terrine with foie and slow roasted chicken reduction ($24). Delightful desserts include Passion fruit cream with coconut and mint ($12); Almond trifle, creamy chocolate and vanilla ice cream ($12) and the restaurant’s own “KLIMA Key Lime Pie” ($12).

“Soft Woods” is the theme of the interior design for KLIMA Restaurant and Bar with inspirations coming from Brazil, Sweden and Spain. Thin slates of beige wood that has been dried and aged for 6-months are packed across the ceiling of the restaurant’s front section, giving an impressive initial focal point when entering the property. A comfortable lounge area, situated upon entering the restaurant, features relaxing chairs and built-in sofas adjacent to wooden and rustic cast-iron candle-lit coffee tables that creates an inviting space for happy hour cocktails or after-dinner drinks. Modern-day artwork selected and imported by both founders are placed throughout the property, accentuated by a suspended centerpiece that faces the street, positioned in the window of the restaurant. Imaginatively sculpted by carved metal letters to resemble the silhouette of a human-like figure, the art piece entitled “Man XVI” by Jaume Plensa from Tel Aviv, is a curious addition to the restaurant’s décor.  In addition to the restaurant’s main menu offered for indoor or outdoor patio dining, KLIMA’s sleek bar area offers patrons a tailored menu of small plates designed for sharing and to accompany the extensive list of wines, beers and cocktails.

The varnished floor of the restaurant’s main dining area is a natural oak throughout, while dining tables are combined with a “Caoba” tropical red wood.  A select number of larger dining tables are of a premium quality black or brown tinted marble, also imported from Barcelona. Separating the bar area from the main dining room is an alluring stretch of intimate tables designed for two, with comfortable couch seating set against a tall wooden bookshelf containing the restaurant’s own collection of ornaments, models and sexually provocative books. Colorful rugs are strategically placed to compliment the wooden finishes, giving the restaurant a cozy and homely vibe. As one passes through towards the main dining area, a subtle image of ocean waves can be seen on the wall opposite the bookshelves, among which surfers are featured within the entire length of the 14-foot photograph. Around the corner, on the far wall of the spacious dining area, hangs a large horizontal mirror behind a series of elaborately designed hanging black spot lamps that also forms an artistic centerpiece unto itself.

The outdoor sub-tropical pérgola (veranda) includes marble dining tables and cane ceiling sections, some of which are transparent to allow views of the star-lit sky. Trailing foliage, potted plants and outdoor greenery climb the iron metal framework towards the indoor dining room, creating a harmonious contrast between the two areas. Lighting fixtures with hanging lampshades shaped into beehive-like wooden spheres and cylinders create an outdoor glow above colorful rugs. Heavy floor-to-ceiling sliding glass doors gives diners the option for complete outdoor privacy from neighboring guests or an unobstructed view of the action inside the restaurant.

The newly appointed Executive Chef, David “Rusti” Rustarazo, originates from Spain and brings a highly seasoned expertise in Western Mediterranean and Catalan cuisine to the table. Through his long working relationship with Rustarazo and KLIMA Miami co-founders, Pablo Fernández-Valdés and Yago Giner in Barcelona, Spain’s reputable culinary authority, Albert Ventura, is the gastronomic advisor for KLIMA Miami.  Ventura currently owns Restaurant COURE, Wall 47 and the recently opened El Cercle restaurant in Barcelona.
