Sexy Fish Just Launched a Menu That Follows Your Night From First Drink to Last Call.
The new Depths menu launches today across all four global locations. Eight cocktails organized into four chapters — Surface, Sunlight, Twilight, Abyss — each one built for a different moment of the evening, with Champagne running through all of it.

Sexy Fish Miami launches Depths today — a new cocktail menu built around a simple premise: a night out has a shape, and your drinks should follow it. Four chapters, eight cocktails, Champagne woven through all of it. Here's how it works.
Surface is where you start — bright, crisp cocktails designed to open the palate and set the pace. The Clover Society (Cygnet 22 Gin, grapefruit, raspberry, lime, Aperitif Rosso) is mid-strength, which is a useful option early in the evening. Open Your Eyes brings Haku Vodka, Aperol, thyme, strawberry, and verjus. The Champagne pairing here is Billecart-Salmon Blanc de Blancs Grand Cru N.V. — aperitif-weight, which is exactly right.
Sunlight is the dinner chapter — cocktails designed to sit alongside Sexy Fish's Japanese-inspired menu rather than compete with it. Voy A Mi pairs Mijenta Blanco Tequila with prickly pear, sage, marigold, and honeysuckle. Another Matcha? takes Hendrick's Gin into matcha, yuzu, and Curaçao territory. The Champagne here is Laurent-Perrier Grand Siècle No. 27 — a gastronomic pour chosen specifically to hold up against umami-forward food.
Twilight is the post-dinner shift — richer, slower, made for conversation. Last Dance in Havana brings Zacapa No. 23 Rum with guava, corn, coconut, and butter. Halcyon goes Grey Goose Vodka with chamomile, pandan, passionfruit, and yogurt — a combination that sounds unusual and probably works better than it should. Drappier Rosé de Saignée N.V. is the Champagne pairing, which makes sense for the mood.
Abyss is the late-night chapter, and the name is not subtle. She's Electric — Condesa Gin, rosé wine aperitif, suze, pomelo, sancho — and the Coral Margarita (Casamigos Blanco, yuzushu, watermelon, wasabi) are both built for the point in the evening when the music gets louder. Perrier-Jouët Grand Brut N.V. from Magnum closes it out. Magnums at that hour are a commitment.
The menu was developed by Xavier Landais, Director of Beverage at Caprice Holdings, with the bar teams across all four cities — London, Manchester, Miami, Dubai — coming together at Sexy Fish's Bar Laboratory in London to taste and refine around 60 drinks before landing on the final eight. The Champagne integration is deliberate: it runs through every chapter as a pairing option, not an afterthought.
